Is there anyway to incorperate control items into dialogs, like radio buttons
or checkboxes, scrolling menus ect?

You will need a more powerful program such as Interface Builder. It’s a part of the developer tools CD with OS X. Applescript is limited to ‘3 button with single dialog’ box and list dialogs.
