How can I save an email message as text, in a folder, on my desktop, using Mail and an applescript?

You might want to take a look at the scripts offered by Andreas Amann. The collection includes “Archive Messages”, which might be close to what you are looking for.

I can not make Mail Scripts export 1 email message to 1 text file. Mail Script exports all messages in a given mailbox to one text file. I want each email message to be contained in it’s own text file. For example, if I have 5 email messages in a given mailbox, I want five text files.
