Is there a function that minimises all windows that are open?
Not really. zoomed is the window property, but many apps don’t have conventional windows (NetNewsWire has several windows in windows, for example) so an attempt to get/set zoomed will fail unless you special case it for that app. It might be a lot more straight-forward to get the name of all the running apps and then hide them one at a time.
