I have an AppleScript saved as application that I added a custom icon to by doing the basic Get Info, copy, paste, procedure. This is fine, it works but for some reason the icon disappears after a day or so… haven’t figured out what exactly causes the problem.
Is it “OK” to use this very basic custom icon method or do I have to do something more complicated with bundled ICS files, etc…

I’m not sure as to why it disappears - but I think you should find that the icon is being loaded from within the application’s bundle. If you go into the bundle, replacing the .icns file with one of your own should sort the problem out.
I recall that some editing apps overwrite the original file when making modification on scripts, losing icons and other characteristics. Apple’s own Script Editor refuses to recognize stay-open applets, overwriting them as ordinary applets. Annoying…
